The Booth Centre's extra special mince pie recipe

Ingredients

To make the pastry:
  • 375g/13oz plain flour
  • 250g/9oz unsalted butter (softened)
  • 125g/4oz caster sugar, plus a bit extra to put on top
  • 1 egg

To make the filling:
  • 800g mincemeat
  • 1 orange (zest grated and flesh chopped up)
  • 1 apple (chopped up into small chunks)

Preparation

  1. Preheat the oven to 200C (180C for fan ovens). Make the pastry by rubbing together the flour, sugar, butter and egg with a tablespoon or so of cold water until it makes a dough. Wrap the pastry in cling film and pop it in the fridge while you prepare the rest. 
  2. Make the filling by putting the mincemeat into a bowl and mixing in the zest of the orange, then adding the orange and apple pieces and mixing together with a wooden spoon.
  3. Roll out the pastry until it's about 3-5mm thick. Cut the pastry into round discs then press them into a greased muffin tray. Fill each one with a generous helping of the mincemeat mix.
  4. Cut out pastry circles for the lids, and press each one down gently over the top of each pie. Alternatively you can cut the pastry into your own design. Sprinkle a little caster sugar over the top. 
  5. Put them into the oven and bake for about 18-20 minutes, then move them onto a wire rack to cool off. To serve, dust them with icing sugar and enjoy!
